Apparently, us millennials care a lot about what we eat. According to this article, we are driving the shift toward vegetarianism.

----

Scientific research, seasonal and local food activists, environmental advocates, chefs, and increasingly health-conscious consumers are ushering in an era where vegetables will usurp meat as the star of the dinner plate. By 2020, vegetables will assume top billing in the American diet, leading to a healthier and more sustainable future.

Good article Brock and I intend on reading it all again. However I would go (and do) even a step further. I am more of a fruitarian. Whenever there are fresh fruits around I go for them because of their spiritual value to consciousness. I support mccoy. In many cases...if not most we get too much protein. Recently I have found myself wanting less nuts and beans. Paramahansa Yogananda said the food of the future would be rays and cosmic energy and sun light. If we are still living a life of cruel barbarism cutting off the heads of animals and violent 'processing' that seems rather remote.

Eating meat is primarily a dangerous environmentally induced criminal activity perpetrated against helpless animals. If you live in places like Michigan you have a very aggressive hunter community which make fun of vegetarians. However if you live in southern California you will find a totally different mentality. It just shows how environment can be deadly to spiritual sensitivity. It is crucial to have communities like this to overcome the ignorance and challenges from the masses.

Luckily Houston(despite being within the big Steak & BBQ State of TX) has a pretty strong community for vegans/vegetarians. =)
